My family and I have been eating gluten free for a couple of years. We love eating pancakes for breakfast on Saturday mornings and finding a gluten free pancake brand that tasted good was really a challenge! We tried many brands, but were never really satisfied. The pancakes often tasted bland, had poor texture, stuck to the pan or the batter would be lumpy leading to uneven pancakes.
I love to cook so I decided to get on a mission to create a recipe that my whole family would love. I have baked with almond flour and coconut flour before and tried making pancakes with them, but the result was not as pleasant as I thought. I was very frustrated, but determined so I kept trying different gluten free flours until one day I came across sweet rice flour or Mochi Flour. Wow, that was my lucky day!
These pancakes are moist and have the perfect balance of fluffiness and sweetness. I made these pancakes for my friends, who soon started asking for the recipe. I decide that I wanted other people to enjoy these pancakes just as much as we do; we decided to package the recipe and share it with you. I hope you and your family enjoys them as we enjoy them!!
